Crispy Italian Burritos

Ingredients

  • 1½ lb ground beef
  • 1 cup pepperoni, halved
  • 1 (14-oz) jar pizza sauce
  • 2 tsp Italian seasoning
  • 6 burrito size flour tortillas
  • 1 (8-oz) pkg shredded mozzarella cheese
  • 6 Tbsp butter, divided

Instructions

  1. Cook beef and pepperoni in a large skillet over medium-high heat until beef is browned and crumbly; drain, and return to skillet. Stir in pizza sauce and seasoning.
  2. Spread beef mixture down centers of tortillas. Sprinkle with cheese. Fold in sides of tortillas and roll up. Wipe skillet clean.
  3. Melt 3 Tbsp butter in skillet over medium heat. Add 3 wraps, and cook 3 to 4 minutes per side or until browned and crisp. Repeat with 3 Tbsp butter and remaining wraps.

Side Dish Ingredients

  • 2 (8-oz) pkg thin green beans
  • 2 Tbsp olive oil
  • 1 Tbsp lemon zest

Side Dish Instructions

  1. Preheat oven to 400°F.  Toss together all ingredients on a large rimmed baking sheet; spread in a single layer. Season with salt and pepper, if desired. Bake 15 minutes or until browned and tender .
