Cheeseburger Meatballs with Special Sauce

Ingredients

  • 1 large egg
  • 1½ lb ground beef
  • 1 cup shredded Cheddar cheese
  • ¾ cup panko breadcrumbs
  • ½ cup finely chopped pickles, divided
  • 1½ tsp garlic powder, divided
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup mayonnaise
  • 1 Tbsp ketchup
  • 1 Tbsp yellow mustard
  • ½ tsp paprika

Instructions

  1. Preheat oven to 425°F. Lightly beat egg in a large bowl. Add beef, cheese, breadcrumbs, 6 Tbsp pickles, 1 tsp garlic powder, salt, and pepper; gently mix together using your hands. Shape mixture into 1½-inch meatballs.
  2. Arrange meatballs on a lightly greased rack over a large rimmed baking sheet; bake 15 minutes or until done.
  3. Meanwhile, combine mayonnaise, 2 Tbsp pickles, ketchup, mustard, paprika, and ½ tsp garlic powder. Serve meatballs with sauce for dipping.
