Ingredients

  • 12 oz whole grain penne pasta
  • ¼ cup plus 1 Tbsp butter, divided
  • ¼ cup all purpose flour
  • 2 cups 2 percent reduced fat milk
  • 2 large egg yolks
  • ¾ cup freshly grated Parmesan cheese, divided
  • ½ tsp kosher salt, divided
  • ½ tsp pepper, divided
  • 1 lb lean ground turkey
  • 1 Tbsp minced garlic
  • 1 cup canned whole San Marzano tomatoes
  • 2 Tbsp tomato paste
  • 1 tsp ground cinnamon
  • ½ tsp sugar

Instructions

  1. Preheat oven to 400°F. Cook pasta according to package directions.
  2. Melt ¼ cup butter in a large ovenproof skillet over medium heat. Whisk in flour; cook, stirring, 1 minute.
  3. Gradually whisk in milk; cook, stirring, 3 to 5 minutes or until thickened; remove from heat. Whisk in egg yolks, ¼ cup cheese, and ¼ tsp each salt and pepper. Transfer white sauce to a bowl.
  4. Wipe skillet clean. Melt 1 Tbsp butter in skillet over medium heat; add turkey and garlic. Cook 5 to 7 minutes or until browned and crumbly.
  5. Stir in tomatoes, tomato paste, cinnamon, sugar, and ¼ tsp each salt and pepper; simmer 5 minutes, mashing tomatoes with a wooden spoon to desired consistency.
  6. Remove skillet from heat. Fold in pasta and half of white sauce; top with remaining white sauce and ½ cup cheese. Bake 10 to 15 minutes or until hot and bubbly.
