Ravioli with Garlic-Mushroom Sauce

Ingredients

  • 1 (19-oz) pkg frozen cheese ravioli
  • ¼ cup butter, divided
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg sliced mushrooms
  • ½ tsp salt
  • ½ tsp pepper
  • 3 cloves garlic, thinly sliced
  • 1 tsp dried thyme
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook ravioli according to package directions, reserving 1 cup pasta water.
  2. Meanwhile, melt 2 Tbsp butter with oil in a large skillet over medium heat. Add mushrooms; sprinkle with salt and pepper. Cook, stirring occasionally, 6 minutes. Add garlic and thyme; cook 2 minutes.
  3. Add ravioli to pan along with ½ cup pasta water and 2 Tbsp butter; stir until butter melts.
  4. Add cheese, stirring until a thin sauce forms, adding additional pasta water if needed.

Side Dish Ingredients

  • 1 (10-oz) pkg spinach
  • ½ cup sweetened dried cranberries
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
