Baked Apple-Cinnamon Oatmeal

Ingredients

  • 2 cups old fashioned oats
  • ¾ cup packed brown sugar
  • 1 cup chopped walnuts, divided
  • ½ cup dried cherries
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 2 cups milk
  • 2 tsp vanilla extract
  • 6 Tbsp butter, melted
  • 2 McIntosh apples, peeled and cut into ½-inch chunks

Instructions

  1. Preheat oven to 325°F. Stir together oats, brown sugar, ½ cup nuts, cherries, cinnamon, baking powder, and salt in a large bowl.
  2. Whisk eggs, milk, and vanilla in a bowl until blended. Stir in melted butter. Add egg mixture to oat mixture, stirring until blended.
  3. Arrange apples in a lightly greased 11-x 7-inch baking dish. Pour oatmeal mixture over apples. Sprinkle remaining ½ cup nuts over mixture. Bake 40 to 45 minutes or until center is set. Serve warm or at room temperature.
