Baked Apple-Cinnamon Oatmeal
Ingredients
- 2 cups old fashioned oats
- ¾ cup packed brown sugar
- 1 cup chopped walnuts, divided
- ½ cup dried cherries
- 2 tsp ground cinnamon
- 1 tsp baking powder
- ½ tsp salt
- 2 large eggs
- 2 cups milk
- 2 tsp vanilla extract
- 6 Tbsp butter, melted
- 2 McIntosh apples, peeled and cut into ½-inch chunks
Instructions
- Preheat oven to 325°F. Stir together oats, brown sugar, ½ cup nuts, cherries, cinnamon, baking powder, and salt in a large bowl.
- Whisk eggs, milk, and vanilla in a bowl until blended. Stir in melted butter. Add egg mixture to oat mixture, stirring until blended.
- Arrange apples in a lightly greased 11-x 7-inch baking dish. Pour oatmeal mixture over apples. Sprinkle remaining ½ cup nuts over mixture. Bake 40 to 45 minutes or until center is set. Serve warm or at room temperature.
