Beef and Bean Chili

Ingredients

  • 1 lb ground beef
  • 1 (15-oz) can black beans, rinsed and drained
  • ½ (15-oz) can Ranch style beans
  • 1 (14.5-oz) can petite diced tomatoes
  • 1 (8-oz) can tomato sauce
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1½ tsp chili powder
  • 1½ tsp ground cumin
  • ½ tsp pepper
  • ¼ tsp salt
  • ½ cup water
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain well, and transfer to a 3- to 4-quart slow cooker.
  2. Stir in beans, tomatoes, tomato sauce, onion, garlic, chili powder, cumin, pepper, salt, and water.
  3. Cover and cook on LOW 8 hours, stirring occasionally; stir in cilantro.

Side Dish Ingredients

  • 1 (11.5-oz) pkg cornbread mix

Side Dish Instructions

  1. Prepare cornbread according to package directions. Serve half, and reserve remaining half for another meal.
