Ingredients

  • ¾ lb boneless, skinless chicken breasts, sliced
  • ½ (20-oz) pkg frozen bell pepper and onion blend
  • ½ (1-oz) envelope taco seasoning mix
  • 1½ Tbsp olive oil
  • 3 burrito tortillas
  • 1 cup shredded Cheddar Jack cheese
  • 1½ Tbsp butter
  • ¼ cup sour cream

Instructions

  1. Toss together chicken, bell pepper and onion, and seasoning mix. Cook mixture in hot oil in a large nonstick skillet over medium-high heat, stirring frequently, until chicken is done.
  2. Top one side of each tortilla with chicken mixture; sprinkle with cheese. Fold tortillas in half. Wipe skillet clean.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium heat; add 2 quesadillas to skillet. Cook 3 minutes per side or until golden brown; repeat with ½ Tbsp butter and remaining quesadilla. Serve with sour cream, for dipping.

  • 1 (10.3-oz) Southwest salad kit
  • 1 cup rinsed and drained canned black beans

Side Dish Instructions

  1. Prepare salad kit according to package directions in a large bowl. Add beans and toss.
