Chicken Fajita Quesadillas

Ingredients
- ¾ lb boneless, skinless chicken breasts, sliced
- ½ (20-oz) pkg frozen bell pepper and onion blend
- ½ (1-oz) envelope taco seasoning mix
- 1½ Tbsp olive oil
- 3 burrito tortillas
- 1 cup shredded Cheddar Jack cheese
- 1½ Tbsp butter
- ¼ cup sour cream
Instructions
- Toss together chicken, bell pepper and onion, and seasoning mix. Cook mixture in hot oil in a large nonstick skillet over medium-high heat, stirring frequently, until chicken is done.
- Top one side of each tortilla with chicken mixture; sprinkle with cheese. Fold tortillas in half. Wipe skillet clean.
- Melt 1 Tbsp butter in a large nonstick skillet over medium heat; add 2 quesadillas to skillet. Cook 3 minutes per side or until golden brown; repeat with ½ Tbsp butter and remaining quesadilla. Serve with sour cream, for dipping.

- 1 cup rinsed and drained canned black beans

- Prepare salad kit according to package directions in a large bowl. Add beans and toss.
