Ingredients

  • 12 slices bacon
  • 1 (32-oz) pkg refrigerated mashed potatoes
  • ½ (10-oz) pkg spinach
  • 1 (8-oz) block Cheddar cheese, shredded
  • 3 green onions, thinly sliced
  • 1 cup white barbecue sauce

Instructions

  1. Cook bacon over medium heat 6 to 8 minutes or until crisp. Crumble bacon.
  2. Heat potatoes according to package directions. Stir in spinach until wilted.
  3. Divide potato mixture among 6 bowls; top with cheese, bacon, and onions. Drizzle with barbecue sauce.
