Ingredients
- 12 slices bacon
- 1 (32-oz) pkg refrigerated mashed potatoes
- ½ (10-oz) pkg spinach
- 1 (8-oz) block Cheddar cheese, shredded
- 3 green onions, thinly sliced
- 1 cup white barbecue sauce
Instructions
- Cook bacon over medium heat 6 to 8 minutes or until crisp. Crumble bacon.
- Heat potatoes according to package directions. Stir in spinach until wilted.
- Divide potato mixture among 6 bowls; top with cheese, bacon, and onions. Drizzle with barbecue sauce.
