Beef Taco Bowls

Ingredients
- ½ cup long grain white rice
- ½ lb ground beef
- 1 Tbsp less sodium taco seasoning
- 2 Tbsp water
- 1 (9.1-oz) Southwest chopped salad kit
- 1 small tomato, chopped
- ½ avocado, sliced
- ¼ cup taco sauce
- 2 soft taco size flour tortillas
Instructions
- Cook rice according to package directions; divide between 2 bowls.
- Meanwhile, cook beef in a large nonstick skillet over medium-high heat until beef is browned and crumbly. Add taco seasoning and water; bring to a boil, reduce heat, and simmer until very thick.
- Combine salad and dressing from salad kit in a medium bowl; spoon over rice in bowls, and top with beef mixture. Top with tomatoes, avocado, salad kit toppings, and taco sauce.
- Heat tortillas according to package directions. Serve with taco bowls.
