Chicken Souvlaki Pizza
Ingredients
- 1 (1-lb) ball bakery pizza dough
- 3 Tbsp olive oil, divided
- 1 lemon
- 1 lb boneless, skinless chicken thighs, cut into bite-size pieces
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 (12-oz) container refrigerated tzatziki dip
- 1 cup grape tomatoes, sliced or halved
- 1 cup sliced English cucumber
- ½ cup thinly sliced red onion
- 1 cup crumbled feta cheese
- 1 (0.5-oz) pkg fresh dill, chopped
Instructions
- Preheat oven to 400°F. Roll dough into a 16-inch round on a greased baking sheet; prick dough all over with a fork; brush with 2 Tbsp oil. Bake 10 to 15 minutes or until crust is golden.
- Meanwhile, grate zest and squeeze juice from lemon. Sauté chicken and garlic in 1 Tbsp hot oil in a large skillet over medium-high heat 7 to 8 minutes or until done. Stir in lemon zest, juice, and oregano. Season with salt and pepper, if desired.
- Spread tzatziki dip on baked crust. Top with cooked chicken, tomatoes, cucumber, onion, cheese, and dill. Cut into wedges to serve.
