Spiced Apple Cider Salted Caramels

Ingredients

  • 3 cups apple cider
  • 1½ cups granulated sugar
  • ¼ cup light corn syrup
  • ½ cup water
  • ½ cup butter
  • 1 cup heavy cream
  • 2 tsp apple pie spice
  • ½ tsp sea salt

Instructions

  1. Line a loaf pan with parchment paper on all sides. Set aside.
  2. Bring cider to a boil in a large saucepan over medium heat. Reduce heat to low, and simmer 30 to 45 minutes or until cider is thick.
  3. Add sugar, corn syrup, and ½ cup water; increase heat to medium, and cook, stirring occasionally, until mixture is caramel colored; stir in butter and cream.
  4. Bring caramel to a boil over medium-high heat until it reaches exactly 252°F on a candy thermometer. Remove from heat; fold in apple pie spice and salt using a rubber spatula.
  5. Pour caramel into prepared pan; refrigerate 1 hour. Sprinkle with additional salt, if desired. Remove from pan, and cut into 1-inch pieces using a sharp knife. Wrap candies in clear cellophane wrappers, if desired.
