BLT Pasta Salad

Ingredients

  • ½ (16-oz) pkg penne pasta
  • ½ (5-oz) pkg frozen plant based bacon
  • ¼ cup vegan Ranch dressing
  • ½ (9-oz) pkg chopped romaine lettuce
  • ½ pint grape tomatoes, halved

Instructions

  1. Cook pasta according to package directions; drain and rinse under cold water to cool. Transfer pasta to a large bowl.
  2. Meanwhile, cook plant-based bacon according to package directions. Chop into bite-size pieces.
  3. Toss pasta with dressing, lettuce, and tomatoes. Sprinkle with plant-based bacon. Serve immediately.
