Smoked Sausage and Cabbage Soup

Ingredients

  • 1 (13-oz) pkg smoked sausage link, sliced
  • 1 cup chopped onion
  • 3 stalks celery, sliced
  • 3 carrots, sliced
  • 1 Tbsp olive oil
  • 1 (28-oz) can diced tomatoes
  • 1 (32-oz) carton less sodium beef broth
  • ½ head green cabbage, thinly sliced
  • 2 tsp Italian seasoning

Instructions

  1. Cook sausage, onion, celery, and carrots in hot oil in a large Dutch oven over medium-high heat until sausage is browned and vegetables are tender.
  2. Add tomatoes, broth, cabbage, and seasoning; bring to a boil, reduce heat, and simmer 15 minutes or until cabbage is tender.
