Ingredients

  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • ¾ lb boneless, skinless chicken thighs, cut into 1 inch pieces
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ (0.87-oz) pkg shrimp scampi seasoning mix
  • 1 Tbsp lemon juice
  • 2 green onions, thinly sliced

Instructions

  1. Melt butter with oil in a nonstick skillet over medium heat. Sprinkle chicken with salt and pepper. Add chicken and seasoning mix; cook 6 to 8 minutes or until chicken is browned and done.
  2. Stir in lemon juice and green onions. Serve over Spinach Fettuccine recipe.

  • 6 oz fettuccine
  • 2 cups spinach

Side Dish Instructions

  1. Cook pasta according to package directions. Drain, and stir in spinach until wilted.
