Fajita Chicken Salad

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ½ (1-oz) envelope taco seasoning mix
  • ½ red onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1½ Tbsp olive oil
  • 4 cups chopped romaine lettuce
  • 1 Roma tomato, halved lengthwise and sliced
  • 1 avocado, sliced
  • 1½ Tbsp salsa verde, optional
  • 6 Tbsp Ranch dressing

Instructions

  1. Thinly slice chicken, and sprinkle with seasoning mix.
  2. Cook chicken, onion, and bell peppers in hot oil in a large skillet over medium heat until chicken is done and vegetables are tender.
  3. Divide lettuce among 3 plates. Top with chicken mixture, tomatoes, and avocado. Stir salsa into dressing, if desired. Drizzle salads with dressing.
