Fajita Chicken Salad

Ingredients
- 1 lb boneless, skinless chicken breasts
- ½ (1-oz) envelope taco seasoning mix
- ½ red onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1½ Tbsp olive oil
- 4 cups chopped romaine lettuce
- 1 Roma tomato, halved lengthwise and sliced
- 1 avocado, sliced
- 1½ Tbsp salsa verde, optional
- 6 Tbsp Ranch dressing
Instructions
- Thinly slice chicken, and sprinkle with seasoning mix.
- Cook chicken, onion, and bell peppers in hot oil in a large skillet over medium heat until chicken is done and vegetables are tender.
- Divide lettuce among 3 plates. Top with chicken mixture, tomatoes, and avocado. Stir salsa into dressing, if desired. Drizzle salads with dressing.
