Ingredients
- 1 (10-oz) pkg baby spinach
- ½ cup thinly sliced red onion
- ¾ cup balsamic vinaigrette
- 6 hard cooked eggs, quartered
- 2 (8-oz) pkg steamed baby beets, quartered
- ¾ cup coarsely chopped walnuts
- ½ cup crumbled blue cheese
Instructions
- Toss together spinach, onion, and vinaigrette in a large bowl. Top with eggs, beets, nuts, and cheese.
