  • 1 (10-oz) pkg baby spinach
  • ½ cup thinly sliced red onion
  • ¾ cup balsamic vinaigrette
  • 6 hard cooked eggs, quartered 
  • 2 (8-oz) pkg steamed baby beets, quartered
  • ¾ cup coarsely chopped walnuts 
  • ½ cup crumbled blue cheese

Instructions

  1. Toss together spinach, onion, and vinaigrette in a large bowl. Top with eggs, beets, nuts, and cheese.
