Ingredients

  • 1 (4-oz) pkg diced pancetta
  • 2 shallots, thinly sliced
  • 1 pint heavy cream
  • 2 tsp chopped fresh rosemary
  • ¾ tsp garlic powder
  • ½ tsp dried sage
  • ½ tsp kosher salt 
  • ½ tsp pepper
  • 5 lb Yukon gold potatoes, peeled and thinly sliced
  • 2 cups freshly shredded Gruyere cheese, divided
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F. Cook pancetta and shallots in a skillet over medium heat 5 minutes or until pancetta is crisp and shallots are lightly browned, stirring occasionally.
  2. Combine cream, rosemary, garlic powder, sage, salt, and pepper in a bowl.
  3. Layer one-fourth of potatoes in a lightly greased 13-x 9-inch baking dish; top with ¼ cup Gruyere and ¼ cup cream mixture.
  4. Repeat layers 3 times, beginning with potatoes and ending with cream mixture.
  5. Pour remaining 1 cup cream over potato mixture. Sprinkle with remaining Gruyere, Parmesan, and pancetta mixture.
  6. Cover tightly with foil; bake 1 hour to 1 hour and 15 minutes or until potatoes are tender. Uncover and bake 10 minutes longer or until lightly browned.
