Pancetta Scalloped Potatoes

Ingredients
- 1 (4-oz) pkg diced pancetta
- 2 shallots, thinly sliced
- 1 pint heavy cream
- 2 tsp chopped fresh rosemary
- ¾ tsp garlic powder
- ½ tsp dried sage
- ½ tsp kosher salt
- ½ tsp pepper
- 5 lb Yukon gold potatoes, peeled and thinly sliced
- 2 cups freshly shredded Gruyere cheese, divided
- ½ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 350°F. Cook pancetta and shallots in a skillet over medium heat 5 minutes or until pancetta is crisp and shallots are lightly browned, stirring occasionally.
- Combine cream, rosemary, garlic powder, sage, salt, and pepper in a bowl.
- Layer one-fourth of potatoes in a lightly greased 13-x 9-inch baking dish; top with ¼ cup Gruyere and ¼ cup cream mixture.
- Repeat layers 3 times, beginning with potatoes and ending with cream mixture.
- Pour remaining 1 cup cream over potato mixture. Sprinkle with remaining Gruyere, Parmesan, and pancetta mixture.
- Cover tightly with foil; bake 1 hour to 1 hour and 15 minutes or until potatoes are tender. Uncover and bake 10 minutes longer or until lightly browned.
