Lemon Pork Chops

Tomato-Feta Cauliflower Rice and Steamed Green Beans

Ingredients

  • ½ lb boneless pork chops
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp all purpose flour
  • 2 Tbsp vegetable oil
  • ¼ cup less sodium chicken broth
  • 2 Tbsp lemon juice

Instructions

  1. Sprinkle pork with salt and pepper. Dredge in flour, shaking off excess.
  2. Cook pork in hot oil in a large nonstick skillet over medium-high heat, 4 to 5 minutes per side or until done; remove from skillet.
  3. Add broth and lemon juice to skillet; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Spoon over pork chops.

Side Dish Ingredients

  • 2 cups frozen cauliflower rice
  • 1 small Roma tomato, chopped
  • ¼ cup crumbled feta cheese
  • 1 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Cook cauliflower according to package directions. Drain, if needed, and stir in tomato and cheese. Sprinkle with salt and pepper, if desired.
  2. Steam green beans according to package directions.
