Lemon Pork Chops
Tomato-Feta Cauliflower Rice and Steamed Green Beans
Ingredients
- ½ lb boneless pork chops
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 Tbsp all purpose flour
- 2 Tbsp vegetable oil
- ¼ cup less sodium chicken broth
- 2 Tbsp lemon juice
Instructions
- Sprinkle pork with salt and pepper. Dredge in flour, shaking off excess.
- Cook pork in hot oil in a large nonstick skillet over medium-high heat, 4 to 5 minutes per side or until done; remove from skillet.
- Add broth and lemon juice to skillet; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Spoon over pork chops.
Side Dish Ingredients
- 2 cups frozen cauliflower rice
- 1 small Roma tomato, chopped
- ¼ cup crumbled feta cheese
- 1 (8-oz) pkg thin green beans
Side Dish Instructions
- Cook cauliflower according to package directions. Drain, if needed, and stir in tomato and cheese. Sprinkle with salt and pepper, if desired.
- Steam green beans according to package directions.
