Ingredients

  • 2 (8-oz) blocks cream cheese, softened
  • 2 cups shredded pepper Jack cheese, divided
  • 2 cups shredded Cheddar cheese, divided
  • 1 Tbsp taco seasoning mix
  • 1 (15-oz) can refried black beans
  • 1 (15-oz) can black beans, rinsed and drained
  • 2 jalapeños, thinly sliced
  • ¼ cup fresh cilantro leaves
  • ½ cup diced tomato
  • 2 Tbsp sliced black olives
  • 2 Tbsp crumbled cojita cheese
  • 1 (11-oz) bag tortilla chips

Instructions

  1. Preheat oven to 400°F. Combine cream cheese, 1 cup pepper Jack cheese, 1 cup Cheddar cheese, and seasoning mix in a bowl. Beat at medium speed with a mixer until blended. Spoon mixture into a 9-inch baking dish.
  2. Spread refried beans over cheese mixture. Top with black beans, 1 cup pepper Jack cheese, and 1 cup Cheddar cheese. Bake 25 to 30 minutes or until hot and bubbly.
  3. Top with jalapeños, cilantro, tomato, olives, and crumbled cheese. Serve with tortilla chips.
