Ingredients

  • ½ (16-oz) box elbow macaroni
  • 2½ Tbsp butter
  • 2 Tbsp all purpose flour
  • 1 cup whole milk
  • 1 cup chicken broth
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp dried thyme
  • ¾ cup shredded sharp white Cheddar cheese
  • 2 cups shredded cooked chicken
  • ¾ cup frozen peas and carrots
  • ½ (8-oz) pkg American cheese slices
  • ½ cup crushed buttery round crackers

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions; drain well.
  2. Meanwhile, melt butter in a Dutch oven over medium heat. Add flour; cook, whisking constantly, 2 minutes. Gradually whisk in milk and broth; cook, stirring, until thickened and bubbly. Stir in salt, pepper, and thyme.
  3. Gradually add shredded cheese, stirring until blended. Stir in chicken, vegetables, and pasta. Spoon into a lightly greased 9-inch baking dish. Top with cheese slices and crushed crackers.
  4. Bake 25 to 30 minutes or until hot and bubbly.

  • ½ (5-oz) pkg spinach
  • ½ cup blueberries
  • 1 cup sliced strawberries
  • 1 (11-oz) can mandarin oranges in juice, drained
  • ¼ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl just before serving.
