Ingredients
- ½ (16-oz) box elbow macaroni
- 2½ Tbsp butter
- 2 Tbsp all purpose flour
- 1 cup whole milk
- 1 cup chicken broth
- ½ tsp salt
- ½ tsp pepper
- ½ tsp dried thyme
- ¾ cup shredded sharp white Cheddar cheese
- 2 cups shredded cooked chicken
- ¾ cup frozen peas and carrots
- ½ (8-oz) pkg American cheese slices
- ½ cup crushed buttery round crackers
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions; drain well.
- Meanwhile, melt butter in a Dutch oven over medium heat. Add flour; cook, whisking constantly, 2 minutes. Gradually whisk in milk and broth; cook, stirring, until thickened and bubbly. Stir in salt, pepper, and thyme.
- Gradually add shredded cheese, stirring until blended. Stir in chicken, vegetables, and pasta. Spoon into a lightly greased 9-inch baking dish. Top with cheese slices and crushed crackers.
- Bake 25 to 30 minutes or until hot and bubbly.

- ½ cup blueberries
- 1 cup sliced strawberries
- 1 (11-oz) can mandarin oranges in juice, drained
- ¼ cup balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl just before serving.
