Peanut-Sesame Tofu

Ingredients
- 1 (14-oz) pkg extra firm tofu, cubed
- 3 Tbsp olive oil
- 2 (12-oz) pkg vegetable stir fry medley
- 1 cup sesame sauce
- ⅓ cup peanut butter
- 3 Tbsp less sodium soy sauce
Instructions
- Cook tofu in hot oil in a large skillet over medium-high heat 8 minutes or until browned.
- Meanwhile, cook vegetables according to package directions. Add vegetables, sesame sauce, peanut butter, and soy sauce to skillet with tofu. Cook 3 minutes or until thoroughly heated. Serve over rice.
