Ingredients

  • 1 (14-oz) pkg extra firm tofu, cubed
  • 3 Tbsp olive oil
  • 2 (12-oz) pkg vegetable stir fry medley
  • 1 cup sesame sauce
  • ⅓ cup peanut butter
  • 3 Tbsp less sodium soy sauce

Instructions

  1. Cook tofu in hot oil in a large skillet over medium-high heat 8 minutes or until browned.
  2. Meanwhile, cook vegetables according to package directions. Add vegetables, sesame sauce, peanut butter, and soy sauce to skillet with tofu. Cook 3 minutes or until thoroughly heated. Serve over rice.
