Hot Chocolate Pancakes

Ingredients

  • 1 cup whole wheat pancake mix
  • 1 (1-oz) packet hot cocoa mix
  • 1 tsp baking powder
  • ¾ cup 1 percent low fat milk
  • 2 large eggs, lightly beaten
  • 1 Tbsp canola oil
  • 1 tsp vanilla extract
  • ¼ cup whipped topping
  • ¼ cup natural chocolate syrup
  • ¼ cup miniature marshmallows

Instructions

  1. Whisk together pancake mix, cocoa mix, baking powder, milk, eggs, oil and vanilla in a bowl until blended and slightly lumpy.
  2. Heat a large nonstick skillet or griddle over medium-low heat; lightly coat with cooking spray.
  3. Pour ¼ cup batter for each pancake onto hot skillet. Cook 2 to 3 minutes or until begins to bubble; flip, and cook until done.
  4. Serve pancakes with whipped topping, syrup, and marshmallows.
