Hot Chocolate Pancakes
Fresh Strawberries
Ingredients
- 1 cup whole wheat pancake mix
- 1 (1-oz) packet hot cocoa mix
- 1 tsp baking powder
- ¾ cup 1 percent low fat milk
- 2 large eggs, lightly beaten
- 1 Tbsp canola oil
- 1 tsp vanilla extract
- ¼ cup whipped topping
- ¼ cup natural chocolate syrup
- ¼ cup miniature marshmallows
Instructions
- Whisk together pancake mix, cocoa mix, baking powder, milk, eggs, oil and vanilla in a bowl until blended and slightly lumpy.
- Heat a large nonstick skillet or griddle over medium-low heat; lightly coat with cooking spray.
- Pour ¼ cup batter for each pancake onto hot skillet. Cook 2 to 3 minutes or until begins to bubble; flip, and cook until done.
- Serve pancakes with whipped topping, syrup, and marshmallows.
