Ingredients

  • 1 lb boneless pork roast
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 2 Tbsp butter, cut into pieces
  • 2 Tbsp capers
  • 2 cloves garlic, minced

Instructions

  1. Sprinkle pork with pepper. Cook pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned on all sides.
  2. Transfer pork to a 3- to 4-quart slow cooker. Add lemon juice, butter, capers, and garlic.
  3. Cover and cook on LOW 8 to 10 hours or until pork is tender.
  4. Slice pork, and serve with lemon-caper sauce.

  • ½ (12-oz) pkg frozen petite green peas
  • ½ (10-oz) pkg plain couscous
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook peas and couscous according to package directions. Toss together peas, couscous, salt, and pepper.
