Ingredients

  • 1½ lb London broil
  • 1 tsp salt, divided
  • ½ tsp black pepper
  • ¾ cup chopped fresh parsley
  • ¼ cup olive oil
  • ¼ cup lime juice
  • ¼ tsp crushed red pepper
  • 4 cloves garlic, halved
  • 1 avocado, quartered

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle steak with ½ tsp salt and black pepper. Grill, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  2. Meanwhile, process parsley, oil, lime juice, ½ tsp salt, red pepper, and garlic in a food processor until blended. Add avocado, and pulse until slightly chunky. Serve sauce with steak.

  • ¾ cup frozen green peas
  • ½ tsp salt

  1. Cook rice and peas according to package directions. Combine rice, peas, and salt.
