Avocado-Herb London Broil
Green Pea RiceIngredients
- 1½ lb London broil
- 1 tsp salt, divided
- ½ tsp black pepper
- ¾ cup chopped fresh parsley
- ¼ cup olive oil
- ¼ cup lime juice
- ¼ tsp crushed red pepper
- 4 cloves garlic, halved
- 1 avocado, quartered
Instructions
- Preheat grill or grill pan to medium-high heat. Sprinkle steak with ½ tsp salt and black pepper. Grill, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, process parsley, oil, lime juice, ½ tsp salt, red pepper, and garlic in a food processor until blended. Add avocado, and pulse until slightly chunky. Serve sauce with steak.
