Shrimp Tacos with Avocado-Mango Salsa

Ingredients

  • 2 lb peeled and deveined, large raw shrimp
  • ½ tsp garlic powder
  • ½ tsp salt, divided
  • 3 Tbsp olive oil
  • 3 limes
  • 2 avocados, diced
  • 1 cup chopped mango
  • 1 small bell pepper, chopped
  • ½ cup chopped fresh cilantro, divided
  • 18 fajita size low carb tortillas 

Instructions

  1. Sprinkle shrimp with garlic powder and ¼ tsp salt. Cook shrimp in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until shrimp are done.
  2. Cut 1 lime into wedges. Squeeze juice from 2 limes into a bowl. Add avocado, mango, bell pepper, ⅓ cup cilantro, and ¼ tsp salt, tossing to combine.
  3. Fill tortillas with shrimp, and top with salsa. Serve with remaining cilantro and lime wedges.
