Shrimp Tacos with Avocado-Mango Salsa

Ingredients
- 2 lb peeled and deveined, large raw shrimp
- ½ tsp garlic powder
- ½ tsp salt, divided
- 3 Tbsp olive oil
- 3 limes
- 2 avocados, diced
- 1 cup chopped mango
- 1 small bell pepper, chopped
- ½ cup chopped fresh cilantro, divided
- 18 fajita size low carb tortillas
Instructions
- Sprinkle shrimp with garlic powder and ¼ tsp salt. Cook shrimp in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until shrimp are done.
- Cut 1 lime into wedges. Squeeze juice from 2 limes into a bowl. Add avocado, mango, bell pepper, ⅓ cup cilantro, and ¼ tsp salt, tossing to combine.
- Fill tortillas with shrimp, and top with salsa. Serve with remaining cilantro and lime wedges.
