Balsamic-Apricot Chicken
Portobello Mushroom Cauliflower "Risotto"

Ingredients
- 1 lb asparagus, trimmed
- 3½ Tbsp olive oil, divided
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2¼ lb boneless, skinless chicken breasts
- 2 Tbsp balsamic vinegar
- 2 Tbsp Dijon mustard
- 2 Tbsp apricot fruit spread
- 1 Tbsp minced shallot
- 2 tsp brown sugar
Instructions
- Preheat oven to 400°F. Toss together asparagus, 1½ Tbsp oil, and ¼ tsp each salt and pepper on a large rimmed baking sheet; spread in a single layer. Bake 15 minutes or until crisp-tender.
- Meanwhile, pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with ½ tsp each salt and pepper.
- Cook chicken, in batches if necessary, in 1½ Tbsp oil in a large ovenproof skillet over medium-high heat 2 to 3 minutes per side or until browned. Return all chicken to skillet.
- Whisk together vinegar, mustard, fruit spread, shallot, ½ Tbsp oil, and sugar in a small bowl; brush all over chicken. Transfer skillet to oven and bake 10 minutes or until chicken is done.

- 1 (8-oz) pkg sliced baby portobello mushrooms
- ½ cup chopped onion
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 2 (12-oz) pkg frozen cauliflower rice, thawed and drained
- ½ cup less sodium chicken broth
- ½ cup freshly grated Parmesan cheese
- ¼ cup heavy cream
- 1 Tbsp butter
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook mushrooms, onion, and garlic in hot oil in a large skillet over medium heat 6 minutes or until mushrooms are browned and onion is tender.
- Stir in cauliflower; cook 3 minutes, stirring occasionally. Stir in broth; reduce heat, and cook 5 minutes or until cauliflower is tender.
- Stir in cheese, cream, butter, salt, and pepper; cook 7 minutes or until thickened.
