Ingredients

  • 1 lb asparagus, trimmed
  • 3½ Tbsp olive oil, divided
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 2¼ lb boneless, skinless chicken breasts
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp Dijon mustard
  • 2 Tbsp apricot fruit spread
  • 1 Tbsp minced shallot
  • 2 tsp brown sugar

Instructions

  1. Preheat oven to 400°F. Toss together asparagus, 1½ Tbsp oil, and ¼ tsp each salt and pepper on a large rimmed baking sheet; spread in a single layer. Bake 15 minutes or until crisp-tender.
  2. Meanwhile, pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with ½ tsp each salt and pepper.
  3. Cook chicken, in batches if necessary, in 1½ Tbsp oil in a large ovenproof skillet over medium-high heat 2 to 3 minutes per side or until browned. Return all chicken to skillet.
  4. Whisk together vinegar, mustard, fruit spread, shallot, ½ Tbsp oil, and sugar in a small bowl; brush all over chicken. Transfer skillet to oven and bake 10 minutes or until chicken is done.

  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 (12-oz) pkg frozen cauliflower rice, thawed and drained
  • ½ cup less sodium chicken broth
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup heavy cream
  • 1 Tbsp butter
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook mushrooms, onion, and garlic in hot oil in a large skillet over medium heat 6 minutes or until mushrooms are browned and onion is tender.
  2. Stir in cauliflower; cook 3 minutes, stirring occasionally. Stir in broth; reduce heat, and cook 5 minutes or until cauliflower is tender.
  3. Stir in cheese, cream, butter, salt, and pepper; cook 7 minutes or until thickened.
