Ingredients

  • ½ (16-oz) pkg whole grain penne pasta
  • 1 lb Broccolini, trimmed
  • ¼ cup freshly shredded fontina cheese
  • ¼ cup freshly shredded mozzarella cheese
  • ¼ cup freshly grated Parmesan cheese
  • 2 Tbsp crumbled gorgonzola cheese
  • ¼ cup heavy cream
  • 1 clove garlic, minced
  • 1 tsp fresh thyme leaves
  • ¼ tsp freshly ground pepper
  • ⅛ tsp kosher salt

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Meanwhile, Combine Broccolini and ¼ cup water in a large microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave at HIGH 3 minutes or until crisp-tender; drain and cut Broccolini into 3-inch pieces.
  3. Toss pasta with cheeses, cream, reserved pasta water, garlic, thyme, pepper, and salt over medium-low heat 2 to 3 minutes until cheese melts and sauce is thickened.
  4. Serve Broccolini over pasta or gently stir in just before serving.
