Four-Cheese Broccolini Penne

Ingredients
- ½ (16-oz) pkg whole grain penne pasta
- 1 lb Broccolini, trimmed
- ¼ cup freshly shredded fontina cheese
- ¼ cup freshly shredded mozzarella cheese
- ¼ cup freshly grated Parmesan cheese
- 2 Tbsp crumbled gorgonzola cheese
- ¼ cup heavy cream
- 1 clove garlic, minced
- 1 tsp fresh thyme leaves
- ¼ tsp freshly ground pepper
- ⅛ tsp kosher salt
Instructions
- Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
- Meanwhile, Combine Broccolini and ¼ cup water in a large microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave at HIGH 3 minutes or until crisp-tender; drain and cut Broccolini into 3-inch pieces.
- Toss pasta with cheeses, cream, reserved pasta water, garlic, thyme, pepper, and salt over medium-low heat 2 to 3 minutes until cheese melts and sauce is thickened.
- Serve Broccolini over pasta or gently stir in just before serving.
