Pork Chops with Mushroom Gravy

Ingredients

  • 6 (1 inch thick) bone in pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup beef broth
  • 2 Tbsp olive oil
  • 1 Tbsp less sodium soy sauce
  • 1 Tbsp Dijon mustard
  • 1 (16-oz) pkg sliced mushrooms
  • ½ Tbsp cornstarch
  • 2 Tbsp cold water

Instructions

  1. Sprinkle pork with salt and pepper; place in a 5- to 7-quart slow cooker.
  2. Stir together onion, garlic, cream, broth, oil, soy sauce, and mustard; pour over pork. Top with mushrooms.
  3. Cover and cook on LOW 7 hours or until pork is tender. Remove pork from cooker; cover to keep warm. Whisk together cornstarch and water; add to cooker. Increase heat to HIGH; cover and cook 15 minutes or until gravy is thickened. Serve mushroom gravy over pork.

  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp olive oil
  • 1 tsp orange zest
  • 2 Tbsp fresh orange juice
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook broccoli in hot oil in a large skillet over medium-high heat 6 minutes or until crisp-tender. Stir in orange zest, orange juice, salt, and pepper.
