Greek Salad Pizza
Ingredients
- 1 (15-oz) pkg already rolled out bakery pizza dough
- 1 Tbsp olive oil
- 1½ cups shredded mozzarella cheese, divided
- 2 cups baby spinach
- 3 Roma tomatoes, thinly sliced
- ½ red onion, thinly sliced
- ½ (12-oz) jar marinated artichoke hearts, drained and quartered
- ⅓ cup halved pitted kalamata olives
- ⅓ cup sliced pepperoncini peppers
- ½ cup crumbled feta cheese
Instructions
- Preheat oven to 450°F. Roll out pizza dough into a 16-inch round on a greased baking sheet; prick dough all over with a fork. Brush with oil. Bake 8 minutes.
- Top partially-baked pizza with 1 cup mozzarella, spinach, tomatoes, onion, artichokes, olives, and pepperoncini peppers.
- Sprinkle pizza with feta and ½ cup mozzarella. Bake 10 minutes or until crust is golden. Serve half, and reserve remaining half for another meal.
