Ingredients

  • 2 cups orzo
  • 1½ lb boneless, skinless chicken breasts, cubed
  • 2 tsp minced garlic
  • 2 tsp Italian seasoning
  • 2 Tbsp olive oil
  • 2 (14.5-oz) cans fire roasted diced tomatoes
  • 1 (15-oz) can cannellini beans, rinsed and drained
  • 2 (12-oz) pkg frozen broccoli florets

Instructions

  1. Cook orzo according to package directions; drain and set aside.
  2. Meanwhile, cook chicken, garlic, and seasoning in hot oil in a large skillet over medium-high heat, stirring occasionally, until chicken is browned.
  3. Stir in tomatoes and beans; bring to a boil, reduce heat, and simmer 5 minutes.
  4. Meanwhile, steam broccoli according to package directions; add to chicken mixture along with orzo. Toss, and season with salt and pepper, if desired.
