Italian Chicken and White Bean Skillet

Ingredients
- 2 cups orzo
- 1½ lb boneless, skinless chicken breasts, cubed
- 2 tsp minced garlic
- 2 tsp Italian seasoning
- 2 Tbsp olive oil
- 2 (14.5-oz) cans fire roasted diced tomatoes
- 1 (15-oz) can cannellini beans, rinsed and drained
- 2 (12-oz) pkg frozen broccoli florets
Instructions
- Cook orzo according to package directions; drain and set aside.
- Meanwhile, cook chicken, garlic, and seasoning in hot oil in a large skillet over medium-high heat, stirring occasionally, until chicken is browned.
- Stir in tomatoes and beans; bring to a boil, reduce heat, and simmer 5 minutes.
- Meanwhile, steam broccoli according to package directions; add to chicken mixture along with orzo. Toss, and season with salt and pepper, if desired.
