Chock-Full Chicken Noodle Soup
French Bread with Basil Butter
Ingredients
- 1 (16-oz) pkg crinkle cut carrots
- 3 cloves garlic, minced
- 2 (8-oz) pkg chopped onion, celery, and bell pepper mix
- 2 Tbsp butter
- ¾ tsp salt
- ½ tsp pepper
- 2 (32-oz) cartons less sodium chicken broth
- 1 (6.5-oz) pkg garlic and herb spreadable cheese
- 6 oz egg noodles
- 3 cups shredded rotisserie chicken
Instructions
- Cook carrots, garlic, and onion mix in melted butter in a large Dutch oven over medium-high heat 5 minutes. Add salt, pepper, and broth; bring to a boil.
- Reduce heat to medium. Add spreadable cheese, egg noodles, and chicken. Cook, stirring often, 6 to 8 minutes or until noodles are cooked and cheese is melted.
Side Dish Ingredients
- ½ (14-oz) French bread
- 3 Tbsp butter, softened
- 1 Tbsp refrigerated basil paste
- 1½ tsp minced garlic
Side Dish Instructions
- Preheat broiler. Cut bread in half lengthwise; place on a baking sheet. Broil 2 to 3 minutes or until toasted.
- Stir together butter, basil paste, and garlic; serve with bread.
