Chock-Full Chicken Noodle Soup

Ingredients

  • 1 (16-oz) pkg crinkle cut carrots
  • 3 cloves garlic, minced
  • 2 (8-oz) pkg chopped onion, celery, and bell pepper mix
  • 2 Tbsp butter
  • ¾ tsp salt
  • ½ tsp pepper
  • 2 (32-oz) cartons less sodium chicken broth
  • 1 (6.5-oz) pkg garlic and herb spreadable cheese
  • 6 oz egg noodles
  • 3 cups shredded rotisserie chicken

Instructions

  1. Cook carrots, garlic, and onion mix in melted butter in a large Dutch oven over medium-high heat 5 minutes. Add salt, pepper, and broth; bring to a boil.
  2. Reduce heat to medium. Add spreadable cheese, egg noodles, and chicken. Cook, stirring often, 6 to 8 minutes or until noodles are cooked and cheese is melted.

Side Dish Ingredients

  • ½ (14-oz) French bread
  • 3 Tbsp butter, softened
  • 1 Tbsp refrigerated basil paste
  • 1½ tsp minced garlic

Side Dish Instructions

  1. Preheat broiler. Cut bread in half lengthwise; place on a baking sheet. Broil 2 to 3 minutes or until toasted.
  2. Stir together butter, basil paste, and garlic; serve with bread.
