Ingredients

  • 1½ lb sirloin steaks
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil, divided
  • ½ cup sliced shallots
  • 1 cup less sodium beef broth
  • ½ cup red wine
  • 2 tsp Dijon mustard
  • 1 Tbsp butter
  • 1 Tbsp chopped fresh rosemary

Instructions

  1. Sprinkle steaks with salt and pepper. Cook in 1 Tbsp hot oil in a large cast-iron skillet over medium-high heat 5 to 6 minutes per side or to desired doneness. Remove from skillet; let stand 10 minutes before slicing across the grain.
  2. Cook shallots in 1 Tbsp hot oil in same skillet 2 minutes or until tender. Add broth, wine, and mustard, scraping skillet to loosen browned bit.
  3. Bring to a boil; cook 6 minutes or until thickened and reduced by half. Stir in butter and rosemary. Serve sauce over steak.

  • 1 (8-oz) carton sour cream
  • 1 Tbsp minced garlic
  • 2 green onions, chopped
  • 1½ lb asparagus, trimmed
  • 2 Tbsp butter
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook potatoes according to package directions; stir in sour cream, garlic, and onions.
  2. Cook asparagus according to package directions; toss with butter, salt, and pepper.
