Ingredients

  • ½ (18-oz) pkg frozen oven roasters red potato wedges and onions
  • ½ Tbsp minced garlic
  • 1 lb top sirloin steak
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 1½ Tbsp garlic and herb butter

Instructions

  1. Preheat oven to 450°F. Spread potato mixture and garlic in a single layer on a large greased rimmed baking sheet. Bake 20 minutes.
  2. Meanwhile, sprinkle steak all over with salt and pepper. Cook steak in hot oil in a large cast-iron skillet over medium-high heat 6 minutes. Flip and cook 4 to 6 minutes or to desired doneness. Remove from heat. Top with butter; let stand 5 minutes. Thinly slice steak.
  3. Serve steak with roasted potatoes.

  • 1 (5-oz) pkg spring mix
  • 1 tomato, cut into wedges
  • ½ English cucumber, sliced
  • 2 oz fresh mozzarella cheese pearls
  • ¼ cup olive oil vinaigrette
  • ¼ cup seasoned croutons

  1. Toss together all ingredients in a medium bowl.
