Grilled Salmon with Garlic-Herb Crème Fraîche

Ingredients

  • ½ lemon
  • ¼ cup creme fraiche
  • ½ (0.5-oz) pkg fresh chives, finely chopped
  • 1 Tbsp chopped fresh parsley
  • 1½ tsp Dijon mustard
  • ½ tsp garlic salt
  • ⅛ tsp pepper
  • 2 Tbsp olive oil vinaigrette
  • ¾ lb salmon fillets

Instructions

  1. Preheat grill or grill pan to medium-high heat. Grate zest and squeeze juice from lemon half. Combine lemon zest, lemon juice, crème fraîche, chives, parsley, mustard, garlic salt, and pepper in a bowl.
  2. Brush vinaigrette over fish. Grill fish, skin sides down, 4 minutes. Turn fish over, and grill 3 to 4 minutes or until fish flakes with a fork. Serve fish with crème fraîche mixture.

  • ½ head cauliflower, cut into ¾ inch slabs
  • 3 Tbsp olive oil vinaigrette
  • ⅛ tsp garlic salt
  • ⅛ tsp pepper
  • 1 (8.5-oz) pouch microwavable seven whole grains mix

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush both sides of cauliflower slabs with vinaigrette; sprinkle with garlic salt and pepper. Grill 5 to 7 minutes per side or until tender and grill marks appear.
  2. Meanwhile, microwave grains according to package directions.
