Chicken Pita Nachos

Ingredients
- ¾ lb boneless, skinless chicken breasts
- ½ (9-oz) pkg baked whole wheat pita chips
- ⅓ cup plain hummus
- 1½ cups chopped romaine lettuce
- 2 small Roma tomatoes, chopped
- ⅓ cup crumbled feta cheese
- 2 Tbsp sliced pitted kalamata olives
- 1½ tsp olive oil
- 1½ tsp red wine vinegar
- ½ tsp dried oregano
Instructions
- Preheat oven to 350°F. Sprinkle chicken lightly with pepper, if desired. Arrange in a lightly greased pan. Bake 28 to 30 minutes or until done. Cool slightly, and shred with 2 forks.
- Arrange chips on a platter; top with hummus, lettuce, chicken, tomatoes, cheese, and olives.
- Whisk together oil, vinegar, and oregano; drizzle over nachos.
