Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ½ (9-oz) pkg baked whole wheat pita chips
  • ⅓ cup plain hummus
  • 1½ cups chopped romaine lettuce
  • 2 small Roma tomatoes, chopped
  • ⅓ cup crumbled feta cheese
  • 2 Tbsp sliced pitted kalamata olives
  • 1½ tsp olive oil
  • 1½ tsp red wine vinegar
  • ½ tsp dried oregano

Instructions

  1. Preheat oven to 350°F. Sprinkle chicken lightly with pepper, if desired. Arrange in a lightly greased pan. Bake 28 to 30 minutes or until done. Cool slightly, and shred with 2 forks.
  2. Arrange chips on a platter; top with hummus, lettuce, chicken, tomatoes, cheese, and olives.
  3. Whisk together oil, vinegar, and oregano; drizzle over nachos.
