Ingredients

  • 2½ Tbsp tomato paste
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp Worcestershire sauce 
  • 1 Tbsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup less sodium beef broth
  • 2½ lb bone in beef short ribs
  • ½ onion, sliced
  • 2 carrots, sliced
  • 5 sprigs fresh oregano
  • 1 Tbsp chopped fresh oregano

Instructions

  1. Whisk together tomato paste, vinegar, Worcestershire, seasoning, salt, and pepper in a bowl; stir in broth.
  2. Place beef, onion, carrots, and oregano sprigs in a lightly greased 5- or 6- quart slow cooker; add broth mixture. Cover and cook on LOW 7 to 8 hours or until beef is tender. Sprinkle with chopped oregano.

  • 2 (12-oz) pkg frozen mashed cauliflower
  • ¼ cup softened cream cheese
  • 2 tsp chopped fresh thyme
  • 1 tsp dried crushed rosemary

Side Dish Instructions

  1. Cook cauliflower according to package directions. Stir in cream cheese, thyme, and rosemary. Sprinkle with salt and pepper, if desired.
