Ingredients
- 2½ Tbsp tomato paste
- 3 Tbsp balsamic vinegar
- 1 Tbsp Worcestershire sauce
- 1 Tbsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
- 1 cup less sodium beef broth
- 2½ lb bone in beef short ribs
- ½ onion, sliced
- 2 carrots, sliced
- 5 sprigs fresh oregano
- 1 Tbsp chopped fresh oregano
Instructions
- Whisk together tomato paste, vinegar, Worcestershire, seasoning, salt, and pepper in a bowl; stir in broth.
- Place beef, onion, carrots, and oregano sprigs in a lightly greased 5- or 6- quart slow cooker; add broth mixture. Cover and cook on LOW 7 to 8 hours or until beef is tender. Sprinkle with chopped oregano.

- 2 (12-oz) pkg frozen mashed cauliflower
- ¼ cup softened cream cheese
- 2 tsp chopped fresh thyme
- 1 tsp dried crushed rosemary
Side Dish Instructions
- Cook cauliflower according to package directions. Stir in cream cheese, thyme, and rosemary. Sprinkle with salt and pepper, if desired.
