Ingredients

  • ⅔ cup orange juice
  • 2 Tbsp lemon juice
  • 2 Tbsp lime juice
  • 2 Tbsp honey
  • 1 Tbsp Dijon mustard
  • 1 tsp chopped fresh thyme
  • 2¼ lb salmon fillets
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 450°F. Bring orange juice, lemon juice, lime juice, and honey to a boil in a small saucepan; reduce heat, and simmer 10 minutes or until reduced by half. Stir in mustard and thyme.
  2. Place fish on a foil-lined rimmed baking sheet; brush with oil, and sprinkle with salt and pepper. Top with half of orange juice mixture.
  3. Bake 10 to 12 minutes or until fish flakes with a fork. Drizzle fish with remaining orange juice mixture.

  • 2 lb Brussels sprouts, trimmed
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp honey
  • 2 cloves garlic, minced 
  • ½ cup less sodium chicken broth
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Toss together Brussels sprouts, oil, salt, pepper, honey, and garlic in a large bowl.
  2. Cook Brussels sprouts in a large skillet over medium-high heat 2 minutes.
  3. Stir in broth; reduce heat to medium, and simmer 8 minutes or until sprouts are crisp-tender. Toss with lemon juice.
