Easy Roasted Brussels Sprouts

Ingredients
- ⅔ cup orange juice
- 2 Tbsp lemon juice
- 2 Tbsp lime juice
- 2 Tbsp honey
- 1 Tbsp Dijon mustard
- 1 tsp chopped fresh thyme
- 2¼ lb salmon fillets
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 450°F. Bring orange juice, lemon juice, lime juice, and honey to a boil in a small saucepan; reduce heat, and simmer 10 minutes or until reduced by half. Stir in mustard and thyme.
- Place fish on a foil-lined rimmed baking sheet; brush with oil, and sprinkle with salt and pepper. Top with half of orange juice mixture.
- Bake 10 to 12 minutes or until fish flakes with a fork. Drizzle fish with remaining orange juice mixture.

- 2 lb Brussels sprouts, trimmed
- 3 Tbsp olive oil

- ½ tsp pepper
- ½ tsp honey
- 2 cloves garlic, minced
- ½ cup less sodium chicken broth
- 1 Tbsp lemon juice
Side Dish Instructions
- Toss together Brussels sprouts, oil, salt, pepper, honey, and garlic in a large bowl.
- Cook Brussels sprouts in a large skillet over medium-high heat 2 minutes.
- Stir in broth; reduce heat to medium, and simmer 8 minutes or until sprouts are crisp-tender. Toss with lemon juice.
