Ingredients

  • 2 (12-oz) pkg cauliflower florets
  • ¼ cup olive oil
  • 1 Tbsp Ranch seasoning mix
  • 1 (8-oz) block colby Jack cheese, shredded
  • 3 cups shredded rotisserie chicken, heated
  • ⅓ cup Buffalo sauce
  • 2 avocados, diced

Instructions

  1. Preheat oven to 450°F. Toss together cauliflower, oil, and seasoning on a large rimmed baking sheet; spread in a single layer.
  2. Bake 20 to 25 minutes or until cauliflower is lightly browned tender, stirring halfway through baking.
  3. Push cauliflower towards center of baking sheet in a single layer. Top with cheese. Bake 2 to 3 minutes longer or until melted.
  4. Combine chicken and buffalo sauce. Top cauliflower with chicken mixture and avocados.
