Buffalo Chicken Roasted Cauliflower

Ingredients
- 2 (12-oz) pkg cauliflower florets
- ¼ cup olive oil
- 1 Tbsp Ranch seasoning mix
- 1 (8-oz) block colby Jack cheese, shredded
- 3 cups shredded rotisserie chicken, heated
- ⅓ cup Buffalo sauce
- 2 avocados, diced
Instructions
- Preheat oven to 450°F. Toss together cauliflower, oil, and seasoning on a large rimmed baking sheet; spread in a single layer.
- Bake 20 to 25 minutes or until cauliflower is lightly browned tender, stirring halfway through baking.
- Push cauliflower towards center of baking sheet in a single layer. Top with cheese. Bake 2 to 3 minutes longer or until melted.
- Combine chicken and buffalo sauce. Top cauliflower with chicken mixture and avocados.
