Mini Mushroom Quiches

Ingredients

  • 3 cups almond flour
  • 8 large eggs, divided
  • 2 large egg whites
  • ¾ tsp salt, divided
  • 1 Tbsp butter
  • 1 Tbsp water
  • 1 tsp Dijon mustard
  • ½ tsp pepper
  • ½ cup thinly sliced mushrooms
  • 2 green onions, chopped
  • 1 Tbsp chopped fresh basil

Instructions

  1. Preheat oven to 375°F. Lightly coat a 12-cup muffin pan with cooking spray.
  2. Combine flour, 2 eggs, egg whites, and ¼ tsp salt; stir until a dough forms. Spoon about 2 Tbsp dough into each muffin cup; press dough in bottom and up sides of cups.
  3. Bake 10 minutes or until golden brown.
  4. Meanwhile, whisk together 6 eggs, butter, water, mustard, ½ salt, and pepper; stir in mushrooms, onions, and, if desired, basil. Pour egg mixture into crusts.
  5. Bake 20 to 25 minutes or until center is set. Cool 10 minutes.

Side Dish Ingredients

  • 4 tomatoes, sliced
  • ¼ cup chopped fresh basil
  • ¼ cup olive oil vinaigrette

Side Dish Instructions

  1. Place tomatoes and basil on a platter; drizzle with dressing.
