Mini Mushroom Quiches
Sliced Tomatoes
Ingredients
- 3 cups almond flour
- 8 large eggs, divided
- 2 large egg whites
- ¾ tsp salt, divided
- 1 Tbsp butter
- 1 Tbsp water
- 1 tsp Dijon mustard
- ½ tsp pepper
- ½ cup thinly sliced mushrooms
- 2 green onions, chopped
- 1 Tbsp chopped fresh basil
Instructions
- Preheat oven to 375°F. Lightly coat a 12-cup muffin pan with cooking spray.
- Combine flour, 2 eggs, egg whites, and ¼ tsp salt; stir until a dough forms. Spoon about 2 Tbsp dough into each muffin cup; press dough in bottom and up sides of cups.
- Bake 10 minutes or until golden brown.
- Meanwhile, whisk together 6 eggs, butter, water, mustard, ½ salt, and pepper; stir in mushrooms, onions, and, if desired, basil. Pour egg mixture into crusts.
- Bake 20 to 25 minutes or until center is set. Cool 10 minutes.
Side Dish Ingredients
- 4 tomatoes, sliced
- ¼ cup chopped fresh basil
- ¼ cup olive oil vinaigrette
Side Dish Instructions
- Place tomatoes and basil on a platter; drizzle with dressing.
