Cranberry-Orange Chicken

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ (15-oz) can whole berry cranberry sauce
  • ¼ cup orange juice

Instructions

  1. Sprinkle chicken with salt and pepper. Place chicken in a lightly greased 3- to 4-quart slow cooker.
  2. Whisk together cranberry sauce and orange juice. Pour over chicken.
  3. Cover and cook on LOW 7 to 8 hours or until chicken is tender.

Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable long grain and wild rice
  • 2 slices bacon, chopped
  • ⅓ cup mayonnaise
  • 2 Tbsp whole grain mustard
  • 1 Tbsp honey
  • 1 (12-oz) pkg broccoli florets, coarsely chopped
  • ½ cup shredded Cheddar cheese

Side Dish Instructions

  1. Prepare rice according to package directions.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 minutes or until crisp; drain on paper towels.
  3. Whisk together mayonnaise, mustard, and honey in a bowl. Add broccoli, cheese, and bacon, stirring to combine.
