Cranberry-Orange Chicken
Broccoli Salad and Long Grain and Wild Rice
Ingredients
- 1 lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- ½ (15-oz) can whole berry cranberry sauce
- ¼ cup orange juice
Instructions
- Sprinkle chicken with salt and pepper. Place chicken in a lightly greased 3- to 4-quart slow cooker.
- Whisk together cranberry sauce and orange juice. Pour over chicken.
- Cover and cook on LOW 7 to 8 hours or until chicken is tender.
Side Dish Ingredients
- 1 (8.8-oz) pouch microwavable long grain and wild rice
- 2 slices bacon, chopped
- ⅓ cup mayonnaise
- 2 Tbsp whole grain mustard
- 1 Tbsp honey
- 1 (12-oz) pkg broccoli florets, coarsely chopped
- ½ cup shredded Cheddar cheese
Side Dish Instructions
- Prepare rice according to package directions.
- Meanwhile, cook bacon in a large skillet over medium heat 6 minutes or until crisp; drain on paper towels.
- Whisk together mayonnaise, mustard, and honey in a bowl. Add broccoli, cheese, and bacon, stirring to combine.
