Italian Pot Roast
Easy Cheesy Grits and Green BeansIngredients
- 3 carrots, cut into 1½ inch pieces
- 1 onion, cut into wedges
- 1 red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
- 1 (2½-lb) boneless rump roast
- ½ cup less sodium chicken broth
- 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
- ¼ cup butter
- ⅓ cup all purpose flour
Instructions
- Place carrots, onion, and bell pepper in a 5- to 7-quart slow cooker.
- Rub garlic, Italian seasoning, salt, and pepper over roast; place in cooker. Pour broth into cooker; top with tomatoes.
- Cover and cook on LOW 8 to 10 hours or until beef is very tender. Transfer roast and vegetables to a serving dish; reserve juices in cooker.
- Melt butter in a skillet over medium-high heat; gradually whisk in flour and cook, whisking constantly, 2 minutes.
- Whisk in juices from cooker. Cook, whisking constantly, 8 minutes or until mixture is thickened; pour over remaining roast and vegetables. Serve half of roast over Easy Cheesy Grits recipe; reserve remaining half for another meal.

- ¾ cup quick cooking grits
- ½ cup shredded Cheddar cheese
- 2 Tbsp butter
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ (16-oz) pkg frozen green beans

- Cook grits according to package directions; stir in cheese, butter, salt, and pepper.
- Cook green beans according to package directions.
