Tomato and White Bean Soup

Ingredients

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • 1 (28-oz) can crushed tomatoes with Italian herbs
  • 2 (15-oz) cans cannellini beans, rinsed and drained
  • 2 cups less sodium chicken broth
  • 2 cups water
  • ½ tsp crushed red pepper
  • 1 cup frozen green peas

Instructions

  1. Cook onion, carrots, and garlic in hot oil in a Dutch oven over medium heat until vegetables are tender.
  2. Stir in tomatoes, beans, broth, water, and red pepper; bring to a boil, reduce heat, and simmer, stirring occasionally, 10 minutes. Stir in peas; cook 5 minutes longer or until thoroughly heated.

Side Dish Ingredients

  • 1 (16-oz) container pineapple chunks

Side Dish Instructions

  1. Serve pineapple on the side.
