Tomato and White Bean Soup
Pineapple ChunksIngredients
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 3 Tbsp olive oil
- 1 (28-oz) can crushed tomatoes with Italian herbs
- 2 (15-oz) cans cannellini beans, rinsed and drained
- 2 cups less sodium chicken broth
- 2 cups water
- ½ tsp crushed red pepper
- 1 cup frozen green peas
Instructions
- Cook onion, carrots, and garlic in hot oil in a Dutch oven over medium heat until vegetables are tender.
- Stir in tomatoes, beans, broth, water, and red pepper; bring to a boil, reduce heat, and simmer, stirring occasionally, 10 minutes. Stir in peas; cook 5 minutes longer or until thoroughly heated.

- 1 (16-oz) container pineapple chunks
