Pork Paprikash
Mixed Greens-Apple SaladIngredients
- 2 (1-lb) pork tenderloins, trimmed
- 2 Tbsp paprika, divided
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 onion, chopped
- 1 (14.5-oz) can diced tomatoes
- ½ cup water
- 1 (8-oz) carton light sour cream
- ¼ cup chopped fresh parsley
Instructions
- Cut pork into 1-inch cubes; sprinkle with 1 Tbsp paprika, salt, and pepper.
- Cook pork in hot oil in a large skillet over medium heat 5 to 6 minutes, stirring occasionally, until done. Remove from skillet; set aside.
- Add onion to skillet; cook 5 minutes or until tender.
- Return pork and juices to skillet. Add tomatoes, water, and 1 Tbsp paprika. Bring to a boil over medium heat; reduce heat, and simmer 4 minutes.
- Stir in sour cream; sprinkle with parsley.

- ¼ cup olive oil
- 2 Tbsp red wine vinegar
- 2 tsp Dijon mustard
- ¼ tsp salt
- 1 (12-oz) pkg classic salad mix
- 2 Honeycrisp apples, thinly sliced
Side Dish Instructions
- Whisk together oil, vinegar, mustard, and salt in a large bowl. Add salad mix and apples; toss.
