Crispy Sage Chicken

Cherry-Walnut Spinach Salad

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • ½ cup panko breadcrumbs
  • 1 tsp dried rubbed sage
  • ½ cup reduced fat olive oil mayonnaise
  • 2 Tbsp olive oil

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet; sprinkle with salt and desired amount of pepper.
  2. Combine breadcrumbs and sage in a shallow bowl. Spread mayonnaise on one side of chicken; dredge coated side in breadcrumb mixture.
  3. Cook chicken, coated side down, in hot oil in a large skillet over medium heat 5 to 6 minutes or until crisp. Turn and cook 5 to 6 minutes longer or until chicken is done.

  • 1 (10-oz) pkg spinach
  • ½ cup sweetened dried cherries
  • ½ cup chopped walnuts
  • 6 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
