Crispy Sage Chicken
Cherry-Walnut Spinach SaladIngredients
- 1½ lb boneless, skinless chicken breasts, halved lengthwise
- ½ cup panko breadcrumbs
- 1 tsp dried rubbed sage
- ½ cup reduced fat olive oil mayonnaise
- 2 Tbsp olive oil
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet; sprinkle with salt and desired amount of pepper.
- Combine breadcrumbs and sage in a shallow bowl. Spread mayonnaise on one side of chicken; dredge coated side in breadcrumb mixture.
- Cook chicken, coated side down, in hot oil in a large skillet over medium heat 5 to 6 minutes or until crisp. Turn and cook 5 to 6 minutes longer or until chicken is done.

- 1 (10-oz) pkg spinach
- ½ cup sweetened dried cherries
- ½ cup chopped walnuts
- 6 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
