Horseradish-Garlic Sauce Flank Steak
Mashed Sweet Potatoes and Steamed Green Beans
Ingredients
- 1½ lb flank steak
- ¼ tsp salt
- ¼ tsp pepper
- ⅓ cup nonfat buttermilk
- 3 Tbsp freshly grated Parmesan cheese
- 2 Tbsp reduced fat olive oil mayonnaise
- 1 Tbsp prepared horseradish
- 2 tsp lemon juice
- 1 clove garlic, minced
- 6 Tbsp chopped fresh parsley
Instructions
- Preheat broiler. Place steak on a lightly greased large rimmed baking sheet. Sprinkle with salt and pepper.
- Broil 8 minutes or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
- Combine buttermilk, cheese, mayonnaise, horseradish, lemon juice, and garlic. Spoon sauce over steak, and sprinkle with parsley.

- 1½ lb sweet potatoes
- 2 (12-oz) pkg green beans
- 2 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 375°F. Prick potatoes all over, and place on a baking sheet. Bake 45 minutes or until tender.
- Meanwhile, cook green beans according to package directions.
- Split potatoes, and scoop pulp into a bowl. Add salt and pepper; mash to desired consistency.
