Horseradish-Garlic Sauce Flank Steak

Mashed Sweet Potatoes and Steamed Green Beans

Ingredients

  • 1½ lb flank steak
  • ¼ tsp salt
  • ¼ tsp pepper
  • ⅓ cup nonfat buttermilk
  • 3 Tbsp freshly grated Parmesan cheese
  • 2 Tbsp reduced fat olive oil mayonnaise
  • 1 Tbsp prepared horseradish
  • 2 tsp lemon juice
  • 1 clove garlic, minced
  • 6 Tbsp chopped fresh parsley

Instructions

  1. Preheat broiler. Place steak on a lightly greased large rimmed baking sheet. Sprinkle with salt and pepper.
  2. Broil 8 minutes or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
  3. Combine buttermilk, cheese, mayonnaise, horseradish, lemon juice, and garlic. Spoon sauce over steak, and sprinkle with parsley.

  • 1½ lb sweet potatoes
  • 2 (12-oz) pkg green beans
  • 2 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 375°F. Prick potatoes all over, and place on a baking sheet. Bake 45 minutes or until tender.
  2. Meanwhile, cook green beans according to package directions.
  3. Split potatoes, and scoop pulp into a bowl. Add salt and pepper; mash to desired consistency.
