Pork Paprikash
Mixed Greens-Apple SaladIngredients
- 1 (1-lb) pork tenderloin, trimmed
- 1 Tbsp paprika, divided
- ¼ tsp pepper
- 1 Tbsp olive oil
- ½ onion, chopped
- 1 cup canned diced tomatoes
- ¼ cup water
- ½ cup light sour cream
- 2 Tbsp chopped fresh parsley
Instructions
- Cut pork into 1-inch cubes; sprinkle with 1½ tsp paprika and pepper.
- Cook pork in hot oil in a large skillet over medium heat 5 to 6 minutes, stirring occasionally, until done. Remove from skillet; set aside.
- Add onion to skillet; cook 5 minutes or until tender.
- Return pork and juices to skillet. Add tomatoes, water, and 1½ tsp paprika. Bring to a boil over medium heat; reduce heat, and simmer 4 minutes.
- Stir in sour cream; sprinkle with parsley.

- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 1 tsp Dijon mustard
- ⅛ tsp salt
- ½ (12-oz) pkg classic salad mix
- 1 Honeycrisp apple, thinly sliced
Side Dish Instructions
- Whisk together oil, vinegar, mustard, and salt in a large bowl. Add salad mix and apple; toss.
