Mixed Greens-Apple Salad

Ingredients

  • 1 (1-lb) pork tenderloin, trimmed
  • 1 Tbsp paprika, divided
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ½ onion, chopped
  • 1 cup canned diced tomatoes
  • ¼ cup water
  • ½ cup light sour cream
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Cut pork into 1-inch cubes; sprinkle with 1½ tsp paprika and pepper.
  2. Cook pork in hot oil in a large skillet over medium heat 5 to 6 minutes, stirring occasionally, until done. Remove from skillet; set aside.
  3. Add onion to skillet; cook 5 minutes or until tender.
  4. Return pork and juices to skillet. Add tomatoes, water, and 1½ tsp paprika. Bring to a boil over medium heat; reduce heat, and simmer 4 minutes.
  5. Stir in sour cream; sprinkle with parsley.

Side Dish Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • ⅛ tsp salt
  • ½ (12-oz) pkg classic salad mix
  • 1 Honeycrisp apple, thinly sliced

Side Dish Instructions

  1. Whisk together oil, vinegar, mustard, and salt in a large bowl. Add salad mix and apple; toss.
