Garlic-Butter Salmon

Warm Potato and Broccolini Salad

Ingredients

  • 1½ lb salmon fillets, patted dry
  • ¾ tsp kosher salt
  • ½ tsp freshly ground pepper
  • 2 Tbsp olive oil
  • ¼ cup butter, softened
  • 6 cloves garlic, minced
  • 2 Tbsp finely chopped fresh parsley

Instructions

  1. Sprinkle fish with salt and pepper. Cook fish, in batches, in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
  2. Combine butter, garlic, and parsley; brush on fish.

Side Dish Ingredients

  • 1½ lb Honey Gold potatoes, quartered
  • 1½ lb Broccolini, cut into 2-inch pieces
  • ½ cup olive oil vinaigrette
  • 2 tsp Italian seasoning
  • ¼ cup chopped fresh parsley
  • ½ tsp freshly ground pepper
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Place potatoes and ¼ cup water in a microwave-safe bowl; cover with plastic wrap, leaving a small vent. Microwave at HIGH 6 minutes.
  2. Add Broccolini to potatoes; cover and microwave at HIGH 2 to 4 minutes or until potatoes are tender when pierced with a fork. Drain.
  3. Gently toss potato mixture with remaining ingredients in a bowl. Serve alongside fish.
