Garlic-Butter Salmon
Warm Potato and Broccolini SaladIngredients
- 1½ lb salmon fillets, patted dry
- ¾ tsp kosher salt
- ½ tsp freshly ground pepper
- 2 Tbsp olive oil
- ¼ cup butter, softened
- 6 cloves garlic, minced
- 2 Tbsp finely chopped fresh parsley
Instructions
- Sprinkle fish with salt and pepper. Cook fish, in batches, in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
- Combine butter, garlic, and parsley; brush on fish.
Side Dish Ingredients
- 1½ lb Honey Gold potatoes, quartered
- 1½ lb Broccolini, cut into 2-inch pieces
- ½ cup olive oil vinaigrette
- 2 tsp Italian seasoning
- ¼ cup chopped fresh parsley
- ½ tsp freshly ground pepper
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Place potatoes and ¼ cup water in a microwave-safe bowl; cover with plastic wrap, leaving a small vent. Microwave at HIGH 6 minutes.
- Add Broccolini to potatoes; cover and microwave at HIGH 2 to 4 minutes or until potatoes are tender when pierced with a fork. Drain.
- Gently toss potato mixture with remaining ingredients in a bowl. Serve alongside fish.
