Southwest Breakfast Bowls

Cilantro Cauli-Rice

Ingredients

  • 8 large eggs
  • ½ tsp pepper
  • ¾ lb lean ground turkey breakfast sausage
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup chopped onion
  • ½ tsp ground cumin
  • 1 avocado, sliced
  • ½ cup refrigerated salsa

Instructions

  1. Whisk together eggs and pepper; set aside.
  2. Cook sausage in hot oil in a large skillet over medium heat 5 to 6 minutes or until browned and crumbly. Drain, reserving drippings in skillet.
  3. Add garlic to drippings in skillet; cook 30 seconds or until fragrant. Add bell pepper, onion, and cumin; cook 6 to 8 minutes or until tender. Remove from skillet.
  4. Add eggs; cook 4 minutes or until eggs are thickened and set, stirring constantly. Stir in sausage and vegetables.
  5. Divide Cilantro Cauli-Rice recipe among 4 bowls; top with egg mixture, avocado, and salsa.

  • 1 (12-oz) pkg cauliflower crumbles
  • 1 Tbsp olive oil
  • ¼ cup less sodium chicken broth
  • 2 Tbsp chopped fresh cilantro
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook cauliflower in hot oil in a large skillet over medium-high heat 5 minutes or until browned. Add broth; cover and cook 10 minutes.
  2. Remove from heat; stir in cilantro, salt, and pepper.
