Southwest Breakfast Bowls
Cilantro Cauli-Rice
Ingredients
- 8 large eggs
- ½ tsp pepper
- ¾ lb lean ground turkey breakfast sausage
- 1 Tbsp olive oil
- 1 clove garlic, minced
- 1 red bell pepper, chopped
- 1 cup chopped onion
- ½ tsp ground cumin
- 1 avocado, sliced
- ½ cup refrigerated salsa
Instructions
- Whisk together eggs and pepper; set aside.
- Cook sausage in hot oil in a large skillet over medium heat 5 to 6 minutes or until browned and crumbly. Drain, reserving drippings in skillet.
- Add garlic to drippings in skillet; cook 30 seconds or until fragrant. Add bell pepper, onion, and cumin; cook 6 to 8 minutes or until tender. Remove from skillet.
- Add eggs; cook 4 minutes or until eggs are thickened and set, stirring constantly. Stir in sausage and vegetables.
- Divide Cilantro Cauli-Rice recipe among 4 bowls; top with egg mixture, avocado, and salsa.
Side Dish Ingredients
- 1 (12-oz) pkg cauliflower crumbles
- 1 Tbsp olive oil
- ¼ cup less sodium chicken broth
- 2 Tbsp chopped fresh cilantro
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook cauliflower in hot oil in a large skillet over medium-high heat 5 minutes or until browned. Add broth; cover and cook 10 minutes.
- Remove from heat; stir in cilantro, salt, and pepper.
