Chorizo and Cheese Scrambled Eggs

Ingredients

  • ½ lb ground chorizo sausage
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 8 large eggs, lightly beaten
  • ½ cup shredded Cheddar cheese
  • ¼ cup chopped fresh cilantro
  • ½ tsp pepper
  • ¼ cup refrigerated salsa

Instructions

  1. Cook chorizo and garlic in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until fully cooked and crumbly.
  2. Reduce heat to medium; add eggs to skillet, and sprinkle with cheese. Cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
  3. Sprinkle with cilantro and pepper. Serve with salsa.

  • 3 large zucchini, cut lengthwise into wedges
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Preheat oven to 425°F. Toss zucchini wedges, oil, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until tender, stirring once.
