Chorizo and Cheese Scrambled Eggs
Roasted Zucchini Wedges
Ingredients
- ½ lb ground chorizo sausage
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 8 large eggs, lightly beaten
- ½ cup shredded Cheddar cheese
- ¼ cup chopped fresh cilantro
- ½ tsp pepper
- ¼ cup refrigerated salsa
Instructions
- Cook chorizo and garlic in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until fully cooked and crumbly.
- Reduce heat to medium; add eggs to skillet, and sprinkle with cheese. Cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
- Sprinkle with cilantro and pepper. Serve with salsa.

- 3 large zucchini, cut lengthwise into wedges
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss zucchini wedges, oil, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 20 minutes or until tender, stirring once.
