Mediterranean Tuna Salad
Ingredients
- 4 (5-oz) cans wild caught albacore tuna, drained
- ⅓ cup mayonnaise
- 2 Tbsp lemon juice, divided
- 2 Tbsp capers
- 2 tsp Dijon mustard
- 1 (10-oz) pkg baby spinach
- 2 Roma tomatoes, cut into wedges
- 1 small red onion, thinly sliced
- 1 English cucumber, thinly sliced
- ⅓ cup chopped kalamata olives
- 2 Tbsp olive oil
- ¼ tsp pepper
Instructions
- Stir together tuna, mayonnaise, 1 Tbsp lemon juice, capers, and mustard.
- Combine spinach, tomatoes, onion, cucumber, and olives in a large bowl.
- Whisk together oil, 1 Tbsp lemon juice, and pepper; drizzle over lettuce mixture, and toss.
- Divide spinach mixture among 4 plates; top with tuna salad.
